A narrow shopfront on a backstreet in the Tsukiji outer market. Each morning, wild salmon are chosen and laid out across the ice. No online orders—sold only to those who walk in.

ときしらず

べにじゃけ
Bright crimson flesh, firm to the touch. Grilled until fragrant, then tucked into the center of plain rice or an onigiri.
しおびきざけ
Slow-cured salt-pickled fish, rested until the flavor deepens. Each bite releases the quiet aroma of age. A companion for drinks, the centerpiece of ochazuke.
ちょうからくち
One slice, salted the old way—with a firm hand. A small piece is enough. Clean, direct flavor that pushes rice down your throat.
A whole fish bought at the counter is broken down into fillets, ready for the pan. For gifts, each order is wrapped in paper and tied with a ceremonial noshi ribbon. No charge for either.
